Once a week, I visit the trainees at the French Bakery on Thuy Xuan campus. Recently it has been too warm to study inside, so we bring our chairs out onto the courtyard where the students often gather during break. Although wild and energetic outside of lesson time, the students take their study very seriously. The main aim of each lesson is to prepare students for the interviews they will attend after they graduate. The trainees have ambitions of becoming bakers and pastry chefs in 5 star hotels, ‘boss’ bakers, and Master Chefs.
